Modern｜Empirical Ayuuk Pasilla Mixe Chile Spirit｜ Other Products

Empirical Ayuuk is a flavor-driven spirit from Empirical, the Copenhagen producer founded by Noma alumni Lars Williams and Mark Emil Hermansen that refuses to fit any category. Ayuuk is built on a single ingredient: the pasilla mixe chile, a rare, smoke-dried pepper grown by the Ayuuk (Mixe) people in the mountains of Oaxaca, Mexico, which Empirical sources directly and shares the proceeds with. The chiles are macerated in Empirical's koji-based barley spirit and distilled under vacuum at low temperature to preserve every nuance. Bottled at 43% ABV (86 proof) in a 750ml bottle. The taste is smoky, fruity chile, dried plum and tobacco, a gentle warmth without heat, earthy herbs and a whisper of citrus, finishing long and savory. Sip it neat, use it in place of mezcal in an Old Fashioned or a margarita, or pair it with tomato juice. One of the most talked-about spirits in the world.Buy Empirical Ayuuk Pasilla Mixe Chile Spirit online with fast shipping right to your door.
